Actually old folks used mostly lard, most restaurants use whatever crap is the cheapest, I don't use olive oil for cooking because it's not stable enough but I use it for cheese dips, salads etc.

I prefer olive oil

For the simple reason it comes in liquid form and I get to avoid the additional step of having to take butter out of the fridge, get a knife dirty, then clean the knife, and then wash my hands.
