for years, my stance on steak was the following:
but recently (past few months) i started cooking my steak very rare (cooked from room temperature for 1 minute each side). and you know what? the result has been the best steaks ive ever tasted. always extremely tender, very flavourful, very easy to swallow.
as for liver: years ago, i tried cooked liver for the first time and found it disgusting. had to throw it out. i tried it again sometime later, and it was still gag-inducing. how could anyone eat that garbage? people that said it tasted sweet or otherwise tasty must be lying.
yesterday, i found a packet of lamb livers at the shop and decided to try it again; but this time, i would eat it raw. once home, i warmed it to body temperature and, expecting the worst, raised it to my lips and took a bite. and guess what? it tasted sweet... and very edible. i ate the remainder without issue.
- "ho ho ho, i prefer medium rare because im such a sensible centrist. only tryhards eat rare, and idiots welldone. the best flavour and texture is somewhere in the middle!"
