Fish bladders are used in winemaking and brewing as a fining agent called isinglass to clarify the beverage. The collagen fibers in isinglass, derived from the swim bladders of fish, clump together with suspended particles in the wine or beer, causing them to settle to the bottom so the clear liquid can be drained off.
