Problem with Minecraft is once I am done with a world like you have ( elytra, shoulders, full Nethergate gear + enchants ) I get very lost on what else to do

i play on a server tbh *(anoncraft.cc 1.21* and mainly just talk shit/fuck around, but yeah the game takes a few days max to complete and a couple hours if you're playing on a server with farms/plugins
