it depends
if you're not afraid of VOCs, a memory foam mattress is probably the most comfortable
if you have a the budget for it, tempur-pedic is probably best. but the other memory foam mattresses are probably okay too
if you want to avoid foam, get a spring mattress. funny enough the cheapest ones are the best because they'll have the least foam. just get a very firm one so it hopefully doesn't sag and soften it up with a topper. the pocketed coil ones always sag, so you just want a good old spring mattress
the best of the best are wool mattresses though, but those are very expensive
